Basil Pistachio Sauce
I love making sauces to go with my meals. It really gives the meal the flavor it needs and best thing you can make it ahead of time and use it with other meal. I added pistachio for a bit of nut but if you don’t have c you can skip this one and all the other ingredients together will be just as good. I added some spinach for more leafy greens and you cant even taste it! So why not add the hidden veggies.

> Ingredients> :
– 3/4 Cup fresh basil
– 1/2 Cup Pistachios
– 1/2 Cup spinach
– 1 Tablespoon fresh oregano, chopped or Dryed
– 1 garlic clove, minced
– 1 japapeno, halved and seeds removed (keep it in if you want spicier
– 1 squeezed half a lemon
– 1/4 teaspoon sea salt
– 1/4 cup water
– 1/2 cup panko bread crumps
> Instructions:
Add all the ingredients into a blender or food processor and blend until combined. If the ingredients start to stick to the sides use a utensil to scrap it down and blend again. Add 1 Tablespoon at a time if the sauce is really dry. Taste and add more salt if needed.
