Whole Wheat Banana Oatmeal Chocolate Chip Cookies made with coconut oil

Healthy Banana Oatmeal chocolate chip cookies made from coconut oil instead of butter. These chewy, dairy free cookies taste pretty much like banana bread. I love these cookies, they are a perfect snack for when you have cravings. There is definitely less guilt eating these since there's minimal amount of sugar and is made with coconut oil. These cookies are soft in the middle and slightly crispy edge. I make sure I have extra ripe bananas for this recipe.



Whole Wheat Banana Oatmeal Chocolate Chip Cookies made with coconut oil

Serves: 20

Ingredients:

> * 1/3 cup melted Coconut oil

> * 1/2 cup packed dark brown sugar ( or light brown/coconut sugar)

> * 2 teaspoon Vanilla extract

> * 1 Large egg (room temp)

> * 2 large ripe bananas (really spotted)

> * 3/4 teaspoon baking soda

> * 1 1/4cup white whole wheat flour

> * 1/4 teaspoon sea salt

> * 1 1/4 rolled oats

> * 2/3 cup chocoalte chips

Instructions:

1.) Preheat oven 375 ~ in a medium bowl, whisk together flour, sea salt, baking soda; set aside.

2.) Using an electric Mixer, beat coconut oil, brown sugar, vanilla, egg, mix until smooth & creamy, keep on low speed, add mashed bananas.

3.) Add in all the dry ingredients ( except oats & chocolate chips)

4.) Fold in oats & chocolate chips with a spoon.

5.) Use a cookie scoop, drop the dough on to the baking sheet.

6.) Bake for 10-13 min, until the edges become golden brown, take it out of the oven and let it sit in the baking sheet for a min. Then transfer it to a cooling rack.

7.) Cookies should be stored in a covered container and they will get softer and more cake like the next day. I like to heat them up for 15 sec and enjoy it with my morning coffee or have it as a dessert after dinner.
